My 2019 Levante requires 10W60 Penzoil platinum Euro full synthetic. Very difficult to find and extremely expensive. Are there any substitutes without voiding warranty?

No. You shouldn't switch oil. 10W60 is the recommended oil. You skimp on oil, your engine will not be happy. Don't do it.
